One pan leg of lamb
Slow roast or not. A leg of lamb is most definitely at the top of my roast dinner list.
This one is cooked in the weber and is absolutely incredible, all the smoky outdoor vibes that you want when cooking over the fire.

- leg of lamb
- Potatoes (skins on and halved)
- Onions (skins on and sliced into big thick slices)
- Olive oil
- Salt and pepper
- (all these ingredients get a gloss of olive oil and seasoning, then you can put into the pan with the lamb resting on the top)
Ingredients: Herb crust
- Fresh rosemary
- Fresh sage
- Fresh thyme
- Garlic (6 cloves)
- Olive oil
- 2tsp of salt
Ingredients: minty yogurt sauce
- Big bunch of mint
- Big bunch of parsley
- Zest of one lemon
- Juice of half a lemon
- Salt and pepper
Instructions
Using the pestle and mortar squash the herbs till smooth, then add the yogurt and lemon. Season to taste and serve it with the lamb
