Chicken, Butternut & Feta Pie

Ingredients

Ingredients
  • 500g deboned chicken thighs (Chopped into chunks).
  • 1 small butternut chopped into cubes
  • 1 large onion chopped
  • 2 cloves of garlic chopped
  • 3 sticks chopped celery
  • 1tsp chilli powder
  • 1tsp chilli powder
  • 4/5 sage leaves
  • 350/400ml chicken stock
  • splash of white wine
  • 1 small roll of puff pastry
  • 1 egg for glazing

Instructions

1. Into a pot with a little o live oil soften the onion, celery and garlic.
2. Add the spices and butternut as well as the chicken, coating it in all that goodness.
3. deglaze the pan with some white wine and then add in your stocck.
4. don’t drown it but make sure it just covers the chicken and butternut.
5. you want to cook this until it thickens and the butternut is very soft.
6. season and place the filling into a pie dish, spreading it evenly. Crumble the feta all over the top of the pie filling and then we can cover with our puff pastry lid.
7. get creative and make it yours. Making sure you poke a couple holes into the pastry before baking.
8. brush with egg wash for a golden bronze and bake this beauty for 20 - 25mins @ 180 degrees celsius.
