Zucchini Fritters

4-6 medium zucchinis/baby marrows

2 limes

1 cup of flour

1tsp Dried Italian herbs

1tsp of turmeric

Salt & pepper

Olive oil

1tsp baking powder

1/2 a cup of milk


-With the finer side of a grater, grate all the Zucchini. Place it into a bowl and add the Turmeric, herbs, salt and pepper.

-Then sift in the flour and the baking powder giving it a little mix, don’t be stingy with the seasoning you want them to pack some heavy flavor!

-Zest both limes and add to the Zucchini mixture.

-After all your dry ingredients are in, you can now whisk in the milk or water…whatever you are decide to use, as well as the juice, if one, lime. You want to make sure it’s a fairly thick batter so you have gorgeous little fritters that hold together well.

-Get your pan on the heat and splash some olive oil into it. Let it sit on a medium heat so they cook through evenly and don’t burn on one side. You want them to be fluffy on the inside.

-Flip them when they are lightly bronzed on the one side, this should take 3-5mins.

These are best eaten with some minty Greek yogurt or Tzatziki. Try and You can also change up the vibes by adding whatever veggie you want! The kids won’t even know!
