So this recipe was specifically made for the media launch!
The chicken pesto pie is a one of my webisodes online at the moment! I wanted to come up with something that would be fresh, fast and easy to make when entertaining! So that I wasn’t spending all time in the kitchen!
So that’s why I came up with the pesto pot vibe! It’s so simple and it’s stunning to look at! Inspired by my chicken pesto pie! You can prepare this ahead of time and pop them In the oven when you are ready to eat they are a winner!
This is what you need to serve 8 peeps:
-6 large chicken breasts
-500g packet of frozen peas
-huge bunch of fresh basil
– 4 cloves of garlic
-1 green chilli
-1 large lemon
-dried Italian herbs
-4 Tins of cannelini beans
– a few blobs of marscapone
-splash of full cream milk
-8 consol jars or any jar with a wide rim you are able to munch out of!
Right so it may seem like a lot of ingredients but it’s super easy so don’t freak out!!
Sizzle your chicken, Garlic & herbs in a large saucepan with a glug of olive oil, season it well! Make sure you don’t over cook it -remember it’s going into the oven to bake for another 10 mins and there is nothing worse than dry Huku!
In a separate bowl add about 300g of the peas that have been thawed out, with all of the basil…..the stems and all, a huge glug of olive oil, the green chilli and squeeze of lemon! Using a stick blender, blitz all the green goodness into a delicious pesto! Once it’s a smooth consitancy add the rest of your peas whole and a handful of grated Parmesan! I like to add the peas frozen so they don’t over cook in the oven. They take seconds to cook!
Now we add our Huku! Straight into the green pesto! Season to taste! Really important that you are happy with the seasoning!
The cannelini bean mash is super easy: I fry onions and garlic and add it to the drained beans! This will give that extra flavour you need. The Marscapone and then a splash of milk to loosen it all up! Season very well and add a handful of parm!!! Blitz it with a stick Blender and its Done!
You need to fill the jars about half way with the chicken pesto. Then we top it off with the creamy cannelini bean mash! I use a piping bag cause it’s less messy but you can easily use a spoon! With a final sprinkle of grated parm, these go into a hot oven for about 10-15mins until the cheese is bronzed! ( use the grill setting for the last 5 mins of cooking)
I top these beauties off with a garnishing of Micro herbs and a drizzle of olive oil!
